Banana Oat Blender Muffins (Fluffy Banana): Oats are extremely beneficial for health since they contain antioxidants and also help in improving the blood sugar level.
Ingredients: 2 cups oats, 2 ripe bananas, 2 eggs, 1 cup plain Greek yogurt, 2-3 tbsp honey, 1 ½ tsp baking powder, ½ tsp baking soda, ½ tsp pure vanilla extract, and 1/8 tsp kosher salt.
Up to ½ cup mix-ins: chocolate chips, chopped dark chocolate, nuts, dried cranberries, or blueberries.
Cooking Method: Preheat the oven to 400 degrees and meanwhile, grease 12-cup standard muffin tray. Put all the ingredients in the blender: Bananas, eggs, honey, Greek yogurt, baking powder, vanilla extract, and oats. Blend all the ingredients until combined. Divide the batter in the muffin cups, sprinkle chocolate chips on them and bake for 15 minutes.
